Pour faire court l’upgrade avait planté le serveur il y a un mois et quelques et j’avais été informé par l’hébergeur qu’il fallait passer par eux pour des upgrade majeurs, qu’il fourniraient une VM avec la Debian9 installée et qu’il faudrait que je transfère les applis et re paramètre tout sur la nouvelle machine. Ca me plaisait pas trop mais bon…
Mais comme ils ont mis du temps à fournir la nouvelle VM et que mes applications étaient en panne j’ai fini par bricoler l’ancienne VM pour qu’elle tourne et on a oublié l’upgrade jusqu’à hier où j’ai voulu installer PHP7.0 pour tester une nouvelle version des applis ce qui a déclenché le problème sur les 3 paquets.
Voilà pourquoi je n’avais pas fait le full-upgrade.

Quel est le type de virtualisation utilisé par ton hébergeur ?
Si c’est de la virtualisation de type « isolateur » (LXC, OpenVZ, etc.), ils ont raison et tu risques d’avoir des tas de problèmes en essayant de mettre à niveau.
C’est une VMWARE, donc un Hyperviseur de type 2
Il faudrait vérifier la compatibilité entre la version VMWare utilisée et Debian 9 en tant qu’OS invité :

je ne suis pas sur de savoir trouver laversion exacte . J’utilise virt-what mais le man ne donne pas d’info sur les options

Attention vmware ESXI est de type 1 par contre vmware fusion et vmware workstation sont de type 2.
Et de mémoire avec ESXI il est possible de faire tourner du Debian 9 voir 10
Y-a-t-il moyen de connaitre la version depuis la debian ?
De l’hyperviseur non, tout juste de quel hyperviseur il s’agit.
